. Makes 8 servings

Ingredients

1 tablespoon extra virgin olive oil
4 cloves garlic, minced
1 1 / 2 cup onion minced
1 (28 ounce) can diced tomatoes with their liquid
4 cups low sodium, gluten-free chicken broth
1 teaspoon oregano dry
1 / 4 teaspoon ground chipotle or cayenne pepper
1 / 2 teaspoon ground cumin
1 / black 2 teaspoon pepper
1 bay leaf
3 cups shredded cooked turkey (white and black)
1 small bag of chips white corn
1 bunch cilantro, chopped
1 cup shredded Monterey Jack
2 avocados, sliced
2 lemons cut into wedges

Method

Heat oil in large saucepan over medium heat. Add the garlic and onion. Cook, stirring often, 8 to 10 minutes, until onion is translucent. Add tomato, broth, oregano, ground chipotle pepper, cumin, black pepper, bay leaf and turkey. Bring to a boil, reduce to a simmer. Simmer 15 minutes to allow the flavors to blend.

To serve, divide corn chips (about 5 or 6 per serving) into small pieces and place into containers. Ladle the soup into the chips. Sprinkle with cilantro and cheese. Decorating with avocado slices and lime wedges.

2 cups frozen blueberries fresh or thawed

1 onion / 4 cup red onion

1 jalapeño large, seeded and finely chopped

2 tablespoons lime juice cool

2 blood oranges or navel oranges, peeled, sectioned and cut into 1/4-inch pieces, juices reserved

2 teaspoons grated ginger cool

Sugar 1 / 2 cup

2 stalks celery, peeled to remove strings, cut into 1/4-inch dice

1 / 4 cup mint leaves, coarsely chopped

1 / 4 cup pecans, toasted, broken into pieces

Getting There

Place cranberries in food processor and pulse to chop coarsely, about five pulses. Transfer to a medium bowl.

Add onion, jalapeno, lime juice, orange wedges and juice, ginger, sugar and celery and mix gently. Refrigerate at least 1 hour and up to 2 days. Just before serving, add the mint and walnuts, and stir to combine.

This series of articles deals with nutrition. We've all heard the old saying "you are what you eat 'so let's take a good look at what we are putting into our bodies.

Most of us want to eat healthier, but sometimes it seems that the forces are working against us. Fast food is so tempting. Sally in the office took donuts to share again. Our schedule is so busy they do not have time to cook healthy foods. Finally, it is true that junk food is often cheaper than healthy food. How fair is that?

Today's topic is fat. Not all fats are bad! As a matter in fact, some fats are downright good for you. The key is to understand the difference between the two.

Good fats:

Over the years, Americans have been fed different stories about choosing the right foods for optimal health. When the researchers cautioned that excess dietary fat leads to cardiovascular disease, diabetes and a host of other health problems, Americans jumped on the low fat, fat-free car, with little success.

New studies reveal that we must have some fat in the diet for good health and reducing disease. The omega-3 fatty acids are said to are "essential" because they can not be produced by the body and must be obtained through our food sources.

Omega-3 essential fatty acids may come from plant or marine sources. They can be found in fish and fish oil, unrefined vegetable oils, raw nuts, seeds and beans. Linolenic acid, marine origin, can be found in certain oily fish like mackerel, lake trout, herring, sardines, albacore tuna and salmon. These fish oil supplements and Fish contains bioavailable docosahexaenoic acid (DHA) and eicosapentaenoic (EPA) acid, the two types of omega-3 essential fatty acids, essential for good health.

The plant based omega-3 essential fatty acid is alpha linolenic acid (alpha meaning plant) and can be found in omega-3 rich as canola or flax, soy and walnut oils. This plant source omega-3 essential fatty acids not metabolized in the body such as fish oil. They must be broken down by enzyme systems of the body to DHA and EPA before the body can use its powerful benefits. Linseed oil, the source of the higher plant fatty acid omega-3 is a great alternative for vegetarians and those who can not tolerate fish or fish oil capsules.

Bad fat:

The worst kind of fat are trans fats and saturated fats.

"Trans-fatty acids are bad for the heart and arteries. How to spot trans fatty? Look for "hydrogenated" or "partially hydrogenated" in the ingredient list. They're all over the place.

THE COST:

You can eat healthier fats without breaking the bank. Yes, fish is quite expensive compared to other meats, but a healthier diet need not be expensive.

Some ideas to save money in this topic:

1) Buy fish for sale.

2) many supermarkets sell flash frozen fillets that taste almost as good as fresh, but cost much less.

3) Ask the butcher when the fish is "cheaper." Prices can vary widely throughout the year. Stock when the price is right.

4) store ads. Buy fish only when it is available, even if you have to visit a store that is not his favorite.

5) Buy the "whole fish", which is always less expensive than buying steaks or fillets.
